TURNING XMAS DECORATIONS INTO DINNER

Sadly, it is time to take down the Christmas baubles and pack away the tinsel. This year I piled a load of squashes and pumpkins into a large glass vase and used it as a Christmas cake and mince pies stand. Squashes last for ages so last night I gave some of them a good send off by slicing off their lids, scooping out their seeds and stuffing the cavity with sweated leeks, mustard and blue cheese. A 45 minute blast in a medium hot oven and they were done. A great starter or vege side dish.
